  • Make the Crunch first: Mix together flour, pecans, coconut, and brown sugar in mixing bowl. Melt 1 stick of margarine and add to above mixture.
  • Place mixture on cookie sheet and bake at 400 degrees for 10-15 minutes. Turn mixture every 4-5 minutes.
  • While this is cooking make pudding mixture: Mix the French Vanilla pudding and milk together. Fold in Cool Whip.
  • Put all but 1/8 to 1/4 cup of crunch in 9x13-inch ungreased pan. Add pudding mixture. Sprinkle remaining crunch over the top. Refrigerator till ready to serve.

This is a recipe I received...it is not my creatation. You may substitue sugar free instant pudding and skim milk which makes it great for diabetics.
