  • In a medium bowl, stir together flour, baking powder, cinnamon, baking soda, and salt; set aside. In a large bowl beat eggs, pumpkin, sugar & oil. Add flour mixture; beat until well combined. Stir in chopped pecans, if desired. Spread batter in ungreased 15x10x1 baking pan.
  • Bake in 350 degrees F oven for 25 - 30 minutes or until toothpick comes clean. Cool on wire rack. Frost with cream cheese frosting top with pecan halves. Cut into squares. Store in refrigerator.
  • Cream Cheese Frosting:
  • In medium bowl beat together cream cheese, butter/margarine & 1 tsp. vanilla until fluffy. Gradually add sifted powdered sugar, beating until smooth.
