  • Gingersnap Crust
  • Combine cookie crumbs, sugar, & melted butter or margarine. Mix well and press firmly on bottom and sides of 9-inch pie pan. Bake at 375º for 8 minutes and then let it cool down.
  • Combine pumpkin, pumpkin spice & sugar in a bowl. Spoon in ice cream and blend. Fold in lemon juice and Cool Whip, blending well. Freeze if necessary until mixture will mound.
  • Spoon the mixture into pie crust. Freeze until firm, at least 4 hours. Garnish with heath- brickle if desired and drizzle caramel syrup on top. Store any leftovers in the freezer.

Notes

READY MADE OREO CHOCOLATE CRUST or graham cracker crust can also be used instead of making crust from scratch.
