  • 1) Combine first 7 ingredients in a large mixing bowl.
  • 2) Combine remaining ingredients in a small bowl.
  • 3) Add pumpkin mixture to flour mixture; stir just until moistened.(Batter may be lumpy)
  • 4) Heat skillet over medium heat. Brush with oil. Pour 1/4 cup batter for each pancake; flatten slightly with back of spoon. Cook until bubbles form on surface & begin to burst. Flip. Cook for 1-2 more minutes or until golden brown.

Notes

Great for a fall morning breakfast. Serve with warm maple syrup.

    My daughter has been asking for pumpkin pancakes for a year, so I made them the morning after Thanksgiving and WOW were they wonderful...We now have our new yearly tradition on "Black Friday" who needs to shop when you can stay home and be extremely satisfied:-)

    I made this recipe for me and my son for dinner one night. I really like them, they were good! I made the recipe exactly but did not have any ginger so i added some more cinnamon and it worked well. My 2 year old loved them! Great Halloween breakfast or in our case DINNER!

    I thought these sounded really interesting. I had to try them! I already had a box of premade pancake mix, so I didn't follow the recipe exactly. I used a cup of complete pancake mix (just requires water), 1/4 cup of pumpkin, 3/4 cup of water, sprinkled some cinnamon, and added a little honey, sweetner, and caramel chips. I thought they were pretty good, but the next time I think I will follow the recipe exactly. Mine didn't have much pumpkin or cinnamon flavor. Overall, I thought these were really creative and a great idea for fall!!
