  • Preheat oven 350. In a medium size pot, saute the onion for 4 to 6 minutes, then add cream cheese, chicken and picante sauce. Cook until cream cheese melts.
  • Spoon mixture into the center of tortilla, roll up, and place into a 13 × 9-inch baking dish (grease the dish with cooking spray).
  • Pour enchilada sauce over tortillas and sprinkle with cheese. Bake until cheese melts, about 20 minutes.


Chopped onions - To save time, I buy these pre chopped with a little green pepper.

    This is a VERY easy recipe to whip up and it was a hit with my family. I made 8 enchiladas and was able to feed my family of 6 (served with a salad). Recipe is definitely a "keeper"!

    Loved this reciepe but changed some things. I cooked the chicken with onions, and added 1/4 c. of cheddar cheese to the mix before putting in the tortillas. We also started off with salad. My whole family loved this meal.
