  • Stack the bacon and chop into half-inch pieces. Put bacon in a 4 or 6 quart pot over medium heat. As bacon starts to brown, add chopped onion and garlic.
  • When bacon is done and onions are almost translucent, add spinach. You may need to add the spinach in 2 or 3 batches. Do not reduce heat. Cover and cook for 3-5 minutes stirring occasionally.
  • Remove from heat immediately. Move to serving dish and squeeze juice from one half of a lemon on top.

Special Equipment Needed


The idea is to just wilt the spinach, but not cook all the flavor out. The lemon is a great brightener of flavor for the end. I do not add salt because the bacon tends to be salty enough for me. I sometimes substitute chopped ham for the bacon.
