  • In a large stew pot, boil chicken with skin on until done (about 1/2 hour); set in refrigerator to cool. LEAVE BROTH IN POT. While chicken is cooking, chop onion and garlic to save time.
  • Pour in tomato juice with broth and bring to a boil. Add okra, onions, garlic, seasonings and Minute Rice. Reduce heat to medium-low. Take chicken out of refrigerator, discard skin, pull apart and shred with fingers. Add to pot. Continue cooking until rice is done. Gumbo will thicken up. If it is too thick, just add some water.
  • After ladling into bowls, top with a dollop of sour cream. This is optional of course, but gives the gumbo a unique flavor. Enjoy!

Special Equipment Needed


If you use a thin pot, make sure you stir every few minutes so as not to burn.
