  • Begin with a large pot, coat the bottom with olive oil on medium-high heat until the oil becomes "slick."
  • Add onion to the pan with the celery, sprinkle on Cajun seasoning until it changes the color of the onion. Sweat the vegetables until they are translucent. Reduce heat.
  • Add 2 cans of black beans to the pot, bring to a small boil, add more seasoning to taste and then reduce the heat once more.
  • Cut smoked sausage into 1/4 slices, and chicken breasts pieces into bite-sized cuts. Add meat to the pot of beans and stir.
  • Cook two cups of instant rice, either brown or white, according to manufacturer's instructions.
  • When rice is complete and the meat has been thoroughly warmed, serve beans and meat on top of rice and enjoy

Notes

Brown rice generally adds on 10 more minutes of cooking time. Regular rice can definitely be used if not in a hurry. Recipe tastes wonderful with or without chicken, regular smoked beef sausage can be used, as well as red beans. Several variations can be used. Salt and pepper to taste. I use a LOT of pre-mixed Cajun seasoning.
