Notes

This is a delicious salad that is perfect for getting our daily allotment of vegetables. It is very healthy, and protein such as low sodium beans, poultry, lean red meat on occasion, or seafood can certainly be included for added nutrition. Also, 3/4 oz of reduced fat cheese, such as feta, would taste wonderful sprinkled over the top.
