  • In large bowl put brown sugar, oil, egg, vanilla and yogurt, mix well. Stir in rhubarb and walnuts.
  • In smaller bowl combine flour, baking soda, baking powder and salt. Add this to rhubarb mixture. Pour batter into 3 sprayed small bread pans.
  • Combine sugar and cinnamon, spoon over top.
  • Bake at 350 for 35-40 min. Let cool 5 min. Remove to cooling rack. I place mine in freezer bags to store.

Notes

I make these all the time using fresh or frozen rhubarb and everyone loves them. I have given this recipe away more than any others I have. It was a recipe for muffins but I changed it to breads.
