  • Make graham cracker crust according to recipe. Press in a 8x8 pan. Bake in a preheated 350 degrees F oven for 8 minutes. Remove from oven and cool.
  • While the crust is cooling, in medium size saucepan combine the sugar and cornstarch. Stir in the rhubarb and water. Cook, stirring until thickened. Reduce heat and cook 2-3 minutes longer. Add food coloring. Spread mixture over the cooled crust in pan. Let cool. Fold in the marshmallows. Spread over the rhubarb mixture.
  • Prepare pudding according to package directions. Spread over the marshmallow, Cool Whip mixture. Sprinkle with graham cracker crumbs. Chill. Garnish with strawberries or raspberries.
