  • In a medium saucepan, cook rhubarab in hot water until soft (about 10 minutes).
  • Dissolve dry gelatin in hot rhubarb sauce. Add cold water and stir well.
  • Blend in apples, raisins and walnuts, mixing gently to combine.
  • Pour into 8x8-inch dish.
  • Refrigerate until set (about 4 hours).

Notes

Hint: To plump up raisins without "cooking", place in glass measuring cup and microwave on high for 15 seconds. Each serving equals 94 calories, 4 gram fat, 3 grams protein, 39 mg sodium, 2 gm fiber diabetic: 1 fruit, 1 fat
