  • Combine cornstarch and sugar; stir in water and rhubarb. Cook and stir until thick. Reduce heat; cook 2-3 minutes. Spread mixture onto graham cracker crust and allow to cool.
  • Fold marshmallows into whipped topping and spoon over rhubarb mixture. Prepare pudding and spread over all. Sprinkle with graham cracker crumbs (optional).
  • Chill for one hour.

Notes

May substitute other fruit for rhubarb.
