  • Preheat oven to 350°F. DO NOT COOK NOODLES. Skillet or large pan - brown beef, salt & pepper & drain. Mix beef & spaghetti sauce in your pan or if you don't think it will fit, use a large mixing bowl. Simmer or set aside.
  • In a large bowl mix 2 bags mozzarella, cottage cheese, parmesan cheese, eggs, oregano, Italian seasoning, garlic powder, and salt & pepper. Mix by hand until well blended.
  • Place 1/4 sauce/meat mixture in bottom of a large aluminum roasting pan or 13x9 glass pan. Layer 4 noodles. Add 1/3 thick layer of cheese mixture. Repeat layers ending with sauce mixture - sprinkle 1/2 bag of mozzarella on top. Cover with aluminum foil.
  • Bake 1 hour and 15 minutes - sprinkle remaining mozzarella on top. Let stand 10-15 minutes before serving. I serve mine with salad and garlic bread!

This is such a fantastic easy lasagna I've perfected. My family begs me to make it all the time. I even had to make it for my sister's baby shower for 100 people and received so many raves! I like to use a large aluminum roasting pan so while it cooks I don't have to worry about it bubbling over and it's easy to clean up since you can just throw the pan away afterwards. I've learned through trial and error that the noodles taste better when placed in UNCOOKED - they hold their shape and don't fall apart when serving. With a 13x9 glass pan, I would recommend placing a baking sheet underneath just in case. Also you can cut this recipe in half if needed for a smaller crowd.
