  • Cook rice per package directions. Drain and rinse with hot water to keep rice flakier.
  • Return to pan and add remaining ingredients and mix well.
  • Return to stove and reheat to warm through thoroughly to blend all ingredients. Milk can be added for a creamier consistency.

Special Equipment Needed


The minced onion adds flavor to this casserole although is not necessary. This casserole is usually one of a child's favorite and they sometimes don't like the minced onion. I have also used onion powder instead for flavor and this does go over better with children. I add a little milk for a creamier consistency. This recipe makes an inexpensive meal with a vegetable added on the side and always seems to be a favorite with children and adults alike. This recipe originated from a dietician from Cornell University during the Depression as it was an inexpensive meal to prepare as well as it was very appealing to all appetites.
