  • In large pot, melt butter or margarine on low medium/low heat. Add 3-4 handfuls of crushed, skinny noodles and stir continuously until noodles are light golden brown in color. Add rice to noodles and continue to stir until rice granules turn white.
  • Slowly pour in chicken broth and turn down heat down to low. Cover and simmer until liquid cooks out. Stir occasionaly to ensure that rice does not stick to bottom of pot. If necessary, add more broth until rice is soft.
  • While rice is cooking, saute onion in oil in skillet. When onion is lightly browned, add sliced mushrooms and stir. When done, add to the rice. Serve hot.
