  • 1. Place tomatoes and juice in a stock pot over medium heat. Simmer for 30 minutes.
  • 2. Puree the tomato mixture along with the basil leaves, and return the puree to the stock pot.*
  • 3. Place the pot over medium heat, and stir in the heavy cream and butter. Season with salt and pepper. Heat, stirring until the butter is melted. Do not boil.


* Cool the mixture to room temperature prior to blending, or vent the blender cap during blending to allow steam to escape. The secret to the richness of this soup is to use real butter, fresh basil leaves, and heavy cream. Please do not substitute, or you will not have the same high quality end result. Also, I use 2 Large cans of canned peeled whole makes it a lot faster and A LOT easier!! If you taste it as you go you will probably want to add more heavy cream than it calls for if you use the canned tomatoes like I do. This is sooo good!! My husband LOVES it with grilled a grilled cheese!!
