  • Finely dice the onion, set aside about 1/4 of it. Slice the smoked sausage into bite-sized chunks. In a large skillet, mix remaining onion with ground beef and cook until brown, trying to keep a bit chunky. Drain off fat.
  • Rinse all beans in a strainer (this removes the waxy/tart taste) and place in a large soup pan. Stir in hamburger/onion mixture, tomatoes, picante, sausage, and seasoning.
  • On medium heat bring to a low boil, reduce heat and simmer covered for 45 minutes, stirring every 10 minutes. Let simmer uncovered to desired thickness. Top with onions and cheese.
