  • Poach chicken breasts in water to cover on low simmer/shimmer for 20 minutes, in a skillet, covered. Season poaching water with garlic cloves, bay leaf and peppercorns. Take off heat and let chicken remain in water, covered, 45 minutes.
  • Drain chicken and cool to be able to handle and dice. Dice the chicken in 1/2 inch dice. Add celery, almonds, thyme, dill, garlic powder, Kraft Mayonnaise, grapes if using, and season with salt and pepper.
  • Refrigerate before serving either in lettuce cups or on dollar size sandwich rolls.

This is the first recipe for work that both the women and the men raved about and asked for the recipe. One of the men has said repeatedly that it was the best chicken salad he had ever tasted. When we have a party at work where everyone brings an appetizer or dessert I bring this chicken salad and fill sliced dollar rolls. They go like hot cakes!
