  • Wash chicken and place in roasting pan.
  • Peel, clean, and cut potatoes into chunks. Place in pan around chicken.
  • Peel and cut onion into chunks, and layer on top of potatoes. Peel and roughly cut garlic and place on top of onion.
  • Sprinkle with all the spices and herbs. Add water. Then add butter by the Tbsp. put on top of veggies and chicken.
  • Cover and bake at 350°F for about 3 1/2 hours.

You can also add any other veggies you like. We like to add carrots occasionally. If you want your onions a little more crispy, wait and add them at about the last hour of cooking. The amounts here are not exact. I don't typically measure. This makes a meal for my family of 4, plus leftovers for lunch the next day for 2 kids and myself.

I've been making the version of this using semi-sweet chocolate chips for years now(no candy canes) and it's always been a quick and easy favorite to give as gifts or make last minute for a party. I used white chocolate chips instead of squares...much easier. Pop it into the freezer for a bit to harden and it is easier to break apart.

My only concern is that they are SO sweet I want to brush my teeth soon after eating them so that I don't give my dentist an extra visit. Next time I make these will be for a party!
