  • Preheat oven to 450 degrees F. Wash new potatoes and peel onion. Cut potatoes into quarters and onion into eights.
  • Pour olive oil in bottom of oven safe baking pan to hold potatoes and onions. Place potatoes and onions in pan, with cut side down. Sprinkle with rosemary and pepper.
  • Put in preheated oven, and bake 20 minutes. Stir potatoes and onions, making sure that potatoes are still cut side down. Bake an additional 20 minutes or until cooked.

Notes

This serves four. Easily enlarged and good for leftovers.
