  • Peel and dice potato. Add onion, butter or margarine and a bit of salt; set aside.
  • Cut red pepper in half and clean out seeds. Place in oven under broiler (peeling side up) on flat pan, watch closely and remove when peeling starts to burn. Dice and add to potato mixture, add water till visible through top. Bring to boil then reduce to simmer; cooking till potato, onion and pepper are tender (Do not drain).
  • Add canned milk and creamed corn and stir well. Heat slowly on simmer (turning down to low if it boils too hard). When all is heated and sets for a bit add more salt or pepper to taste and serve while hot with rolls or crackers.

Notes

Chowder is even better if made the day before and reheated slowly. It brings all the flavors together!
