  • Wash and trim peppers, slice into quarters and place on a (lightly brushed with olive oil) cookie sheet.
  • Sprinkle with seasoned salt and drizzled remaining olive oil.
  • Bake at 425°F about 25 minutes in preheated oven. Excellent as a side dish for meats or a delightful snack.

Notes

I can hardly resist eating before serving, they are so delicious. They can be baked even further and used in salads or many other uses.

Left out the olives and used a light sun dried tomato vinaigrette and not near as much cheese as the recipe calls for. Delicious still! I served the fish on top of a bed of cooked, chopped spinach. Even my 2 year old and 17 month old ate it up!
