  • Preheat oven to 425°F. Combine all veggies in a mixing bowl. Add oil to the bowl, turning the bowl as you stream in the oil. Toss veggies until they are coated evenly. Combine poultry seasoning, salt and pepper and sprinkle over the veggies. Toss them again.
  • Spread out onto a baking sheet.
  • Place veggies in oven and roast about 20-25 min or until tender. Half way through baking, turn the veggies with tongs. You can either put into a bowl to serve or place them on skewers, kabob style.

Special Equipment Needed


Haven't tried it yet, but adding some ginger sauce may be good. Kind of like hibachi veggies. Put sauce in a small dish on the side. To make 4 servings, cut the recipe in half.
