  • Pour all of the ingredients into a large bowl and mix them. A large spoon or a potato masher work fine. Add the flour last to adjust the amount to control the consistency.
  • Mold the dough-like mix that you end up with into patties (like thick homemade
  • hamburgers).
  • Coat a frying pan with a little cooking oil. Crisco works just fine. Preheat the oiled pan over medium heat. Slip the patties into the pan, fitting as many as you can but leaving room to turn them. Cook until medium brown on one side, then turn over and do the same to the other side.

I remember spending time at my grandma's house, my favorite thing for her to fixwas salmon croquettes. Yum! I grew up and always said i wanted to learn how to make them, but never got her recipe. So when i found this simple recipe i thought i would try it. I am not a cook though so i was very nervous. When i was cooking it i could not believe how easy it was. The measurements were perfect. And when i took that first bite it brought tears to my eyes because it tasted just like grandma made 40 years ago. I scalloped some potatoes and fried them to go with the meal and made some homeade macaroni and cheese...perfect compliment!

I made this for my family along with scalloped potatoes. They all loved it! I doubled the recipe and shared with a church friend that was in the hospital...he is now wanting the recipe!)
