  • Boil peppers for about 10 minutes (not too soft). Drain water and set aside to cool.
  • While peppers boil, brown ground beef or turkey and drain grease. Prepare Minute Rice as directed on box. Mix meat, Minute Rice, corn, and salsa together.
  • Once peppers are cool enough to handle fill with mixture. Bake covered for 45 minutes at 375. If desired put 1/2 a Polly-O string cheese on each pepper and bake uncovered until melted. Or sprinkle with Kraft Parmesan cheese.

Special Equipment Needed


These are great for those nights your running around with kids activities/meetings. They take about twenty minutes to prepare and can be left in fridge in Corning Ware until ready to bake. My husband usually pops them in the oven so that when we come home dinner is coming out of the oven, and the kids aren't filling up on junk waiting for me to prepare it. Great as lunch leftovers and healthy too.
