  • Remove skin from sausage, brown in a skillet.
  • While sausage is browning, add oil to large pot. Add onion and peppers, cook on medium heat stirring occasionally. When they begin to soften add sugar, salt to taste, and crushed red pepper.
  • Once meat is browned, add to top of vegetables. Turn down heat and let cook until vegetables are completely soft and meat is cooked through. Stir occasionally.

Special Equipment Needed


This is a very flexible recipe. It is easy to cook for a large group, just use more of everything. The veggies really cook down, so you may want to use more than specified. I will sometimes add celery or tomatoes, fresh or sundried. Also good over rice or pasta.
