  • Heat oil in large skillet over medium heat. Chop onion and bell pepper into 1/4" - 1/2" pieces and add to skillet. Slice yellow squash & zucchini squash into 1/8" slices and add to skillet. Cover and let stew stirring occasionally. Stir in Nature's Seasonings.
  • Slice sausage into 1/8" slices and add to skillet. Let stew for a total of 15 - 20 minutes stirring occasionally. Chop tomatoes in half but do not add at this time.
  • When vegetables are tender, remove from heat and add chopped tomato. Serve over rice or all by itself.


I have substituted canned diced tomatoes for the cherry tomatoes; it makes it a little easier. You can also substitute beef sausage or some other sausage for the Polish kielbasa.
