  • Rinse the scallops under cold water and dry with a paper towel. Season them lightly with salt and pepper.
  • In a frying pan large enough to hold all the scallops in one layer, heat half the butter until it begins to color. Saute the scallops for 3 to 5 minutes, turning until golden brown on both sides and firm to the touch. Remove to serving platter and cover to keep warm.
  • Add the vermouth to the hot frying pan, swirl in the remaining butter, add the parsley and pour over the scallops. Serve IMMEDIATELY!
