  • Grease a 9 x 13 baking dish. In a bowl combine crackers and bread crumbs until mixed, and set aside. In a separate bowl using a strainer, empty oysters so they will drain. Save all the liquid. Rinse the oysters under cold water, discarding any that are mushy in the center, and set aside in two equal amounts. Add cream to oyster liquid and stir until blended.
  • To assemble: Cover bottom of the greased baking dish with a layer of mixed crumbs. Add a layer of half the oysters. Season with very little salt and paprika. Continue to layer with crumbs, the rest of the oysters, then salt and paprika (no more than two layers). Pour the oyster and cream liquid over the top layer. Let the liquid absorb. Then pour the melted butter over the top layer.
  • Bake uncovered at 400 degrees for 40 minutes or longer until brown .

Special Equipment Needed


It is best if you put something on the lower shelf in the oven to catch the drips as it bakes.
