  • Preheat oven to 400°F. To make the pastry, mix flour with sugar in a medium sized bowl. Cut in butter until crumbly. In a separate bowl, beat egg yolk with vanilla with a fork. Stir egg mixture into flour mixture until well combined. Then press dough together with your fingers. Press pastry into the bottom and halfway up the sides of a 9 inch buttered springform pan.
  • Using the tines of a fork, score the outside of each apple quarter, from end to end, so it looks like a row of thin apple slices. Arrange apples, scored side up, in the pastry lined pan. In a small bowl, beat cream cheese until fluffy; gradually beat in sugar and vanilla. Add eggs one at a time, beating well after each one. Beat in half-and-half. Pour egg mixture over apples.
  • Bake for 50 to 60 minutes until apples are tender and pastry is well browned. Serve warm or cold.
