I sometimes use white meat chicken in this recipe, works just as well. With seafood you can put clams or any other shell fish you like, it always comes out delishous!
This turned into my husbands FAVORITE dish. I added chicken, mushrooms and a little onion and only used shrimp and crab meat as seafood. I seasoned the chicken with lemon pepper prior to saute. I think key is adding things slowly. I also boiled the raw shrimp in lemon juice and set aside prior to adding. It only toke me 40 minutes to complete from start to finish. I loved it as well.
If I made this recipe again I'd definitely leave out the artichoke hearts and the crab meat. The spinach leaves, maybe, should have been added at the end so they could have maintained their flavor. I just think there were too many ingredients.
