  • Preheat oven to 425°F. Blend flour, baking powder, sugar and salt in a processor. Add butter and cut in, using on/off turns, until the mixture resembles coarse meal. Add 1 1/2 cups cream, blend until dough comes together in moist clumps, adding more cream by tablespoons if dough is dry. Transfer to a large bowl. Gently mix in the cheese.
  • Turn dough out onto a lightly floured surface. Knead dough no more that 30 seconds to bring together. Pat dough out to 1 inch thickness. Using a 2 inch round, cut out biscuits, gathering scraps, pat dough out and cut more biscuits until all of the dough has been used. Or cut out square biscuits.
  • Transfer biscuits to two large ungreased baking sheets, spacing apart. Bake until puffed and golden, about 15 minutes. Transfer to a rack and cool.
