  • Preheat oven to 400°F. Lightly spray a large baking sheet with cooking spray. In large mixing bowl, combine flours, baking powder and baking soda. Blend well. With a fork, blend in the butter or margarine until mix is in pea-size pieces. Add raisins to flour mix.
  • In another small bowl, stir applesauce and sour cream together, blend into flour mix until dough holds together in a ball. Sprinkle with cinnamon-sugar. Knead 1-2 times just until cinnamon is streaked through the dough. Turn dough onto lightly floured board. Roll out to about 1/2-inch thickness. Cut into 2-inch rounds. Place on baking sheet.
  • Bake for 15 min or until biscuits are slightly brown. In bowl, mix powdered sugar with just enough hot coffee to make a glaze. Drizzle over the hot biscuits, serve warm, with cheddar cheese wedges.
