  • Preheat oven to 400°F. In large bowl, gently toss asparagus, radishes and 2 Tbsp. of oil.
  • Spray a jelly roll pan with cooking spray. Arrange veggies in pan. Season with salt and pepper. Roast 35 minutes, stirring once.
  • In saucepan, over medium heat, cook remaining oil until heated. Add shallots, cook 4 min. Add broth, bring to boil. Cook 2 min. Remove from heat. Arrange veggies on platter, top with shallot mix.

Notes

Very simple, yet it has wonderful combinations of tastes.
