  • Preheat oven to 375°F. In bowl, combine first 6 ingredients.
  • Place turkey, skin side down on surface, cover with plastic wrap, use mallet to pound turkey to 3/4" thickness. Remove wrap. Sprinkle with salt and pepper. Spread with bread crumb mix to within 1/2" of edge. Starting from long side, roll up and tie. Place in roasting pan. Sprinkle with salt. Roast for about 1 hr and 15 min.
  • In small pot, cook apple juice and apple jelly over med-high heat until thickened. Cool. Brush over turkey the last 10 min of roasting. Transfer turkey to platter. Skim fat from juices in pan, set pan over 2 burners over med heat. Stir in gravy. Cook, stirring until slightly thickened, 5-10 min, serve with turkey.
