  • Preheat oven to 425°F. Melt butter in rectangular 13x9x2 pan, in oven. In bowl, stir together baking mix, cornmeal, paprika, lemon pepper seasoning and salt.
  • Dip fish into egg whites, then coat with baking mix. Place in pan.
  • Bake uncovered for 10 min. Turn fish, bake 10 min longer or until fish flakes easily with fork.


Very easy, but scrumptious fish dish. I serve w/ homemade french fries and salad.

    for those on low sodium restriction sustituting crushed, unsalted tortilla chips for baking mix, omitting salt and using instead Mrs Dash of your choice is very effective.
