  • In large saucepan or 5-quart pot, combine carrots, water, ginger and 2 Tbsp. butter. Cover, cook on medium heat for 10 minutes or until liquid has evaporated and carrots are almost tender.
  • Add maple syrup, vinegar, salt and pepper. Heat to boiling on med-high heat. Boil 8-10 minutes or until syrup is thick and carrots are tender and coated with glaze. Stir frequently.
  • Remove pan from heat, stir in remaining 1 Tbsp butter. Spoon carrots into serving bowl and garnish with parsley.

Notes

Everyone in my family loves these carrots, especially the children.
