  • Preheat oven to 400°F. Line a large roasting pan with foil, spray with cooking spray. Cut lemon in quarters. Mix butter, garlic, lemon zest, marjoram, thyme and pepper in small bowl.
  • Slide fingers under breast and as much of leg as possible to loosen skin. Spread 3 tbsp butter mix under skin. Spread remaining over skin. Put lemon quarters in body cavity. Place in pan.
  • Roast 1 hr. After 20 min of roasting, cover chicken with foil. Remove pan from oven, arrange potatoes around chicken, stir to coat with drippings. Roast another 30-45 min or until potatoes are tender. Remove chicken to cutting board, let rest 10 min before carving.

Notes

This is a great tasting roast chicken, so simple to make. Make with out the potatoes and instead make scalloped potatoes. Wonderful pairing.
