  • Thaw shrimp in refrigerator overnight. Cut the shrimp tail and devein if necessary and then chop into small pieces. Place cut up shrimp into a medium bowl with juice squeezed from limes and lemons and refrigerate while you continue to prep other ingredients.
  • The next step is to cut up the rest of the ingredients and make what is also known as pico de gallo. Finally mix pico de gallo with the shrimp so all ingredients are mixed together and tomatoes are able to absorb the lemon/lime mixture.
  • Allow to marinate for 2 hours (or longer if possible) serve with tortilla chips.

Notes

I sometimes splash a bit of extra virgin olive oil.
