  • Saute first four ingredients in hot oil in a large skillet over medium heat for 5 minutes, or until onion is tender. Gradually stir in flour until smooth.
  • Stir in tomatoes and next five ingredients. Cover, reduce heat to low, and cook, stirring occasionally for 20 minutes.
  • Stir in shrimp and cook for 5 more minutes, or until shrimp turns pink.
  • Remove and discard bay leaves. Serve over brown rice.


Chicken Creole: Prepare recipe as directed, substituting 1 lb boneless, skinless chicken breast, cut into bite sized pieces, for shrimp. Cook chicken an additional 5 minutes or until done. Proceed as directed. Prep: 15 minutes Cook: 35 minutes Crock-Pot optional: After you sauté first five ingredients and add flour, put everything in the crock-pot on low for at least 1 hour (you can start in the morning and have for lunch).
