  • Rinse and paper towel off the eggplants. Slice them thinly. Slightly beat 3 eggs in a bowl and place a good amount of bread crumbs and parmesan cheese in another shallow bowl.
  • Pour approximately 1 inch of oil into a large frying pan and heat. When the oil is hot, then begin taking each slice, dipping them into the egg on both sides, then coat them with the crumb mixture on both sides. Fry slices in the hot oil until golden brown on both sides (should take 3-4 minutes each side). Place cooked slices on paper towels to drain and cool.
  • In a 9x13-inch pan or large casserole dish, pour a light coating of spaghetti sauce on the bottom. Then layer the eggplant, overlapping slightly. Cover with spaghetti sauce, parmesan and mozzarella cheeses. Repeat with second layer of eggplant, sauce, and cheeses. Cook at 375F for 45 minutes or until bubbly and cheese is melted.

This dish takes about 35-45 minutes to prepare and 45 minutes to cook. This is great as a meatless dinner but can easily include meatballs and Italian sweet sausage on the side for those who prefer meat with dinner. Spaghetti,a green salad and garlic bread can really add to the meal and compliment this dish too! The leftovers are even tastier!
