  • Preheat oven to 350*F. In food processor, combine cream cheese, all but 2 Tbsp. of mozzarella cheese, spinach, onion, walnuts (if desired) and spices. Pulse on high 3-4 seconds or until smooth paste consistency.
  • Spread approximately 1/4 cup mixture on each of the flattened chicken breasts to within 1/2 inch of the edge. Roll from the small end up and secure with 1-2 toothpicks.
  • Coat rolled breasts with Shake 'N Bake and place seam side down on baking dish about 3 inches apart. If any filling remains, divide evenly between chicken on baking dish and form small mounds. Top each mound with reserve mozzarella cheese.
  • Bake at 350*F for 22-25 minutes or until juices run clear. Remove and cool 5 to 10 minutes before serving with favorite sides.
