  • Place chicken in slow cooker with chicken broth. Cook on low for 6 hours.
  • Once chicken is tender and falling apart, place chicken in a skillet. Add 1 can of enchilada sauce and 1 cup of cheese to skillet. Mix until chicken is shredded and cheese is hot and bubbly.
  • Place 2 spoonfuls of chicken mixture in the center of each tortilla. Roll up and place seam side down in a baking dish. Pour additional can of enchilada sauce over rolled tortillas. Sprinkle with remaining cheese.
  • Bake at 450 degrees F for 20 minutes, until cheese is melted and desired brownness.

Notes

Can also substitute beef roast for chicken.

    As Mexican food lovers, we thought is was excellent! it was easy and tasty. My addition to this wonderful recipe was adding some cilantro just before I rolled the enchiladas.
