  • On a sheet of aluminum foil, spread cream cheese to make a 6 by 9 inch square. Spread smoked oyster on top, leaving 1 inch free of oysters on all edges. With the help of the foil, roll cheese and oyster together firmly to create a kind of sausage leaving all oysters inside.
  • On a separate plate sprinkle the parsley. Place finished roll on the parsley and roll to coat with the parsley. Return roll to aluminum foil. Cover the roll tightly.
  • Refrigerate for at least 30 minutes. You can even leave overnight. Serve on a platter with crackers or mini toasts surrounding the roll.
