  • Season chicken on both sides with chicken seasoning. Add as much or as little to taste. Lay the chicken in a square baking pan (a brownie pan works) and place on the top rack of the broiler (set to broil) and top-cook the chicken, about 2-3 minutes each side. Set chicken aside.
  • Place the rack in the oven to middle position and drop the temp to 375. Coat a large frying pan with non-stick spray and cook the onions and peppers with some of the chicken seasoning at high-heat until onions and peppers are cooked.
  • Layer peppers and onions over chicken and top with provolone cheese. Place in center oven rack for 10 minutes or until cheese starts to brown.


Broccoli makes a great side to this or cook more peppers and use those as a side. This self-contained meal is South Beach compliant yet tastes like an endulgence. You may use any chicken seasoning but I prefer Montreal Chicken seasoning. You can also marinade the breasts prior to broiling. Enjoy!
