  • Cook noodles as directed for al dente.
  • Heat oil then stir fry onions and garlic till tender. Add lettuce and stir until limp. Add edamame and stir until tender. Salt and pepper to taste.
  • Add drained noodles and stir to coat noodles. Serve.

Notes

You can brown your favorite meat if meat is wanted. I also love the lettuce in this recipe. It adds color and dimension. You can substitute spinach for added nutrition! We are a big pasta family so my kids eat this up! It also reheats easily.
