I'm going to a Spanish themed party and have been looking for an easy recipe to make. A sopapilla cheesecake sounds like just the right thing to bring and the instructions on this seem simple enough. Can't wait to try it.

I made this for a Cinco de Mayo party, and everyone loved it! It was great to see people coming back for more.

DELICIOUS! It was very good with the powdered sugar. I used three whole packages of cream cheese, and thought the filling was plenty thick. Next time, I will reduced the amount of butter and sugar for the top.
