  • CRUST:
  • Blend graham crackers in blender until fine. Mix in bowl with brown sugar and cinnamon. Melt butter and mix into dry ingredients, blending well with a fork. Pour into a 9" pie plate and refrigerate 2 hours (important).
  • FILLING:
  • Soften cream cheese to room temperature. Beat with mixer until creamy. Add 2 eggs, beaten, sugar and vanilla, beating well after each. Pour into pie crust. Bake 375 degrees for 15-20 minutes. Remove from oven and let stand for 15 minutes. Increase oven heat to 475 degrees.
  • TOPPING:
  • Beat sour cream, sugar, vanilla and almond extract. Mix well. Spoon over slightly cooled filling. Bake at 475 degrees for 10 minutes. Cool and refrigerate at least 4 hours.
