  • 1. In a Dutch oven or large skillet, brown the ground beef until cooked through, about 5 minutes. Add the onion and cook for another 3 min.
  • 2. Add tomatoes, zucchini, summer squash, and Italian seasoning. Cover and cook over low heat for about 15 min. or until the vegetables are done to your likeness.
  • 3. While sauce is simmering, cook the spaghetti according to the directions on the package. Drain and rinse well. Place pasta on a large serving platter and spoon the sauce over it to serve.

My son helped me invent this recipe one night when we were trying to come up with a dish that would use ground beef, zucchini, and summer squash. It went over very big in my house and is now one of our favorite ways to have spaghetti.
